Simple and delicious, nothing says comfort more than a bowl of home-made tomato soup. And on the plus side, it is a very very healthy dish to include in one's meals!
Makes 2 bowls
5-6 medium tomatoes, the ripest/plumpest you can find
1 carrot, peeled and grated
1 onion, chopped
1 tbsp. butter
¼ tsp. garlic paste
salt/pepper to taste
2 tsp. sugar
½ tsp. oregano
1 tbsp. chopped coriander leaves
1 green chili
2 cups chicken broth
2 tbsp. cream OR milk
Chop the tomatoes with their skins and set aside.
Melt the butter, then add the onions and fry until aromatic. Add the garlic paste and black pepper powder. Stir together then add the grated carrot and chopped tomatoes, plus the green chili. Cook together until the tomatoes soften and excess moisture has evaporated. Add the broth, salt and coriander leaves.
Reduce the heat, cover the pot and let the soup simmer for about 10 minutes. Give it a stir occasionally.
Add the oregano and stir it in. Turn off the heat, then blend the mixture until smooth. You can use a hand blender or let the soup cool and use a regular jug blender.
Once pureed, return the soup back into the pot and add sugar. Simmer and adjust consistency to your preference. Finally add the cream or milk and adjust salt/pepper. Give it a final stir and taste. Turn off the heat and serve hot!
