Tomato Chutney

Servings : 1 cup

This chutney is my favourite accompaniment for pilau dishes! You can adjust it to be extra hot or very mild, go according to your taste buds. 🙂

Ingredients

  • 3-4 tomatoes
  • 2 tbsp tomato paste/puree
  • 3-4 green chillies, chopped
  • 1/2 tsp garlic paste
  • 2 tbsp chopped coriander stems
  • 1/2 chopped onion
  • 1 raw mango, peeled and grated
  • 1-2 tsp red chilli powder
  • 1/4 tsp turmeric powder
  • salt to taste
  • juice of half a lemon
  • 2-4 tbsp oil
  • 1/4 tsp rai/mustard seeds

Instructions

Roughly chop the tomatoes with their skins, then put them in the blender. Add the chopped onion, grated mango, green chillies and coriander stems. Blend until smooth (you can add a bit of water if needed).

Heat the oil in a pan, add the mustard seeds then add the garlic paste, followed by the tomato paste/puree, chilli powder and turmeric powder. Stir together for a minute then add the blended mixture. Sprinkle some salt and let these cook and simmer down on gentle heat until the chutney is thick and begins to release some of the oil on the sides.

Taste and adjust spiciness according to your taste. When it’s about done, add the lemon juice, give it a final stir and switch off.
