Tandoori Chicken Pizza with Peri Peri Fries

Our fave home-made pizza, better than any bought pizza, anyday! Served here with some fiery hot peri peri fries.

Here are the base sauce and toppings used recipes:

This makes a 12 inch pizza, enough for 3 very hungry people or 4 if you have any sides like garlic bread, fries, salad...etc.

Pizza Dough

INGREDIENTS

2 ½ cups all-purpose flour
1 ½ tsp. salt
5 tbsp. oil
1 ½ tsp. sugar
1 ½ tsp. instant yeast (use 2 tsp. for colder climates)
2 pinches of baking powder
warm milk mixed with a bit of water for kneading

 

INSTRUCTIONS

Mix all the dry ingredients and the oil, then slowly start adding the warm milk a little at a time.

Get it to a soft dough, the softer the better, knead it very well for at least 8 minutes or more if possible. Dab a touch of oil all over the dough, then cover it and place it somewhere warm. Leave it to rise to double its size, takes about 30 minutes to an hour depending on the weather.

Once risen, punch it down, give it a quick knead and then roll it out to about 12 inches diameter and place on your greased pizza pan/tray.

Again cover the tray with a light cloth/towel and let the base rest/rise slightly for about 15-20 minutes. For step by step instructions, check here.

Peri Peri Fries recipe:

1 kg potatoes, peeled and cut into strips then fried twice to make them extra crisp

Heat 1 tbsp. of margarine, then add 1 tbsp. of spanish paprika and 1 tsp. of chili powder plus some salt to taste.

Once the margarine starts to bubble, get the pan off the heat and slowly add the fries into it, stirring gently with a wooden spoon to make sure all the fries are well coated. Serve!

i want to know that can we make the dough of the pizza only n after baking can freeze it for later on use?if yes than how?

W/Salaam, yes that's fine, prepare and half-bake the pizza base just until it is solid enough but still pale in colour. Wrap it well and freeze. When needed, remove, add your sauce and toppings, bake as directed! :)

Is the dough pre-cooked? If so, bake only until the topping is done/cheese melted and the bottom of the base is toasted slightly. Otherwise for raw dough, about 25 minutes.

After I have prepared the dough do I put the topping on and bake it right away? or do I need to bake the dough first and then when it is nearly done put the toppings on?

Don't bake the base, just add the topping and bake exactly as instructed. Make sure you allow the base to rest and rise before adding the topping as explained in the recipe. :)

W/Salaam, it is powder made from red capsicum, you can omit it if you don't have it. Normally it is sold at supermarkets and resembles tandoori masala but it is mostly not spicy.

Sorry but am not a fan of using the microwave for cooking/baking as it is not very healthy to do that. Have you tried baking on the stove top?

Hi,

How much warm milk would you say the recipe needs? I doubled it today and used just over 2 cups of milk- the dough ended up fairly sticky at first but then kneaded into a lovely dough. Does that sound about right.

Hi. Could be that you added soggy toppings to the base? Next time try and make sure that whatever you add on the base is on the dry side.

Yes you can although plain boiled chicken will not be as flavourful. But it will still be good.

yummy receipe....am gonna give a try 4 sure...ur page z really awsome.....well i dont have a pizza tray/pan...is it fyn to place the dough directly over the oven tray or rack.....or is der any other alternative??please do let me know at the earliest...coz am very eager to give it a try....

You can use the oven tray but not the rack.

W/Salaam, either you are rolling the edges out too thin, or the heating of your oven is a bit intense around the edges. Try leaving the edges a bit thicker or cover the edges with foil midway through baking to prevent them from drying out.

as u have written recipe for minced meat pizza topping. there is nothing written regarding preparation of its topping

Hi, keep it sealed at all times and refrigerate. Remove a small amount in an airtight container for your daily usage, but store that too in the fridge.
