
If you're a fan of beans in gravy, these are ideal! Tasty, nutritous and easy to cook. They go well with plain boiled rice or Rotis.
INGREDIENTS
250gm red cowpeas (washed then soaked for at least 6 hours to overnight)
5 fresh tomatoes, blended
1 medium onion, chopped
2 green chilies
½ tsp. garlic paste
2-3 tbsp. tomato paste
salt to taste
½ tsp. each coriander and cumin powders
¼ tsp. turmeric powder
4 tbsp. oil
3-4 leaves of fenugreek/methi (optional)
chopped coriander for garnishing
INSTRUCTIONS
Heat oil and add the fenugreek leaves (methi) followed by one green chili, slit. Once they sizzle, add the onions and fry until translucent, then add the garlic paste. Stir fry for a few minutes then add the tomato paste and the turmeric, cumin and coriander powders. Fry for a little while, then add the drained cowpeas and cook them in the tomato paste for a minute or two. Then add the blended tomatoes, remaining green chili and the salt.
Simmer on medium heat until the tomatoes thicken slightly. Add a bit of water and if you're using a pressure cooker, close and cook for about 10 minutes. If you're using an open pan, cook on medium heat until the cowpeas are soft. Garnish with chopped coriander. Serve with rotis!
