Spiral Pie - Step by Step
This lovely soft bread pie with a delicious cheesy chicken filling has the most delightful appearance. It makes for a great starter and kids LOVE the pretty spirals which can be torn neatly apart as you eat each slice. You can use any filling that you like in this pie, I prefer THIS one as I find that the cheese really helps hold the mixture together inside the pie.
First, prepare the filling. Put the chicken cubes (or mince) in a bowl and add the yoghurt, ginger, garlic, chopped chilli, salt, paprika or tandoori powder, cumin, turmeric, lemon juice and tomato paste. Mix well and set aside for about 30 minutes.
Heat the oil in a pan, then add the chopped onion and stir fry until softened. Next add the capsicum and stir for a few seconds. Then add the marinated chicken or mince and cook over high heat for a couple of minutes. Reduce the heat and allow the filling to cook for another 10 minutes. Turn the heat off and stir in the black pepper powder. If using chicken cubes, shred with a spoon. I normally just blitz the entire mixture in my food processor for a few seconds. Let this mixture cool COMPLETELY, then add in the ketchup or pizza sauce and the shredded cheese. You can smoke the mixture if you want a BBQ aroma. Cover and set aside. The filling will look like THIS.
Next, prepare the dough. Sieve the flour, then add milk powder, baking powder, sugar, yeast and salt. Then add the oil, butter and the egg and mix together. Now add all the milk gradually whilst kneading, then slowly add in the warm water. You might not need it all, so add it sparingly until your dough is nice and soft. If more liquid is needed to get a soft dough consistency, warm a little more water and use. Knead for a good 8-10 minutes. The more you knead the softer the bread results will be.
Touch a bit of oil with your fingertips and apply all over the ball of dough. Cover in a bowl and set aside for 40 minutes to an hour for it to double in size.
Once the dough is ready, divide it into 2 balls. (PIC 1)
Lightly flour a surface and roll out the first ball into a rectangle of quarter inch thickness. Divide the rectangle into 4 strips. (PIC 2)
Add some filling to each strip, then fold over and seal by applying water on the edge to form a rope shape with the filling hidden inside. (PICS 3 and 4)
Apply oil onto a baking sheet and form the rope into a coil shape in the centre. (PIC 5)
Continue forming more 'ropes' using the rest of the strips and keep attaching them to the spiral, making it bigger. (PICS 6 and 7)
Once all 4 strips are done and added to the spiral, cover with a light cloth and allow the pie to rest for 10 minutes. In the meantime, take the second ball of dough and repeat the same process.
Preheat the oven at 180 C. Brush egg on the pies and sprinkle some sesame seeds over the top. (PICS 8 and 9)
Bake in the preheated oven for about 25-30 minutes or until golden brown. Once baked and ready, brush the pies with a little butter to keep them soft and shiny. (PIC 10)
