I like to think of this dish as a type of 'desi' fried rice. It is a very flavourful famous Mumbai street food that is super easy to put together. The best thing about it is that it makes use of leftover cooked plain rice to prepare a really delicious new meal.
Heat the oil and butter in a pan, then add the cumin seeds and allow them to splutter. Next add the onions and fry them until lightly golden. Stir in the ginger and garlic pastes, followed by the capsicum and chopped tomatoes. Sprinkle on all the powdered spices and some salt, cook for a few minutes until the tomatoes soften. Add a quarter cup of water to help loosen up the mixture, then tip in the peas and the pre-cooked rice. Stir fry until everything is well combined. Cover the pan and turn the heat down to very low. Allow it to steam for about 5-10 minutes and serve garnished with some fresh coriander.
