Layered Rice

It's always great to mix things up. Could a rice dish be any more appealing than one that is this colourful and satisfying?

First comes a base of rice that has been cooked with peas, sweet corn and carrots. Then follows a layer of saucy spicy minced beef, followed by a layer of potato slices. This is then topped off with a decadent layer of creamy white sauce. Finally, to top everything off is a scattering of cheese. The whole dish thing is then baked in the oven until the cheese is melted and golden. Voila! A perfectly delicious everything-in-the-bowl meal!

Ingredients
Mince Sauce
- link provided in instructions below
1 1/2 cups
rice
1 1/2 cups
mixed half-boiled veggies
(I used peas, sweet corn and chopped carrots with capsicum)
2-3
medium potatoes, peeled, sliced and fried
salt to taste
2 tbsp.
oil
butter for greasing the baking dish
1 cup
shredded mozzarella and cheddar cheese
(you can use more for an extra cheesy result)
chilli flakes
(optional)
chopped coriander
(optional
Ingredients for White Sauce
2 tbsp.
butter
2 tbsp.
plain flour
250ml
milk
salt & pepper to taste
Instructions 

First prepare mince sauce using this recipe: Mince Sauce  (omit the capsicum and potatoes and keep the gravy thick)

Grease a 9"x11" baking dish with butter.

Wash and soak the rice for 20-30 mins.  Then boil the rice in a large pot of salted water which contains 2 tbsp. of oil until the rice grains are about 90% done. Add the mixed veggies, stir them in and then drain the water.  Pour this colourful rice into the greased baking dish.

Add the mince sauce to cover the rice.

Next, layer the fried potatoes on top of the mince sauce.

Now you can make the white sauce.

Melt the butter in a pan, then sieve in the flour.  Add salt and pepper and stir until smooth. You need to cook this for 2-3 mins to get rid of the raw taste/smell from the flour.  Remove the pan from the heat and start adding the milk a little at a time while stirring or whisking continuously to form a smooth roux/sauce.  Keep adding the milk until it's all in and the mixture is smooth.  Return the pan on the heat and cook on medium heat until the sauce thickens slightly.  Adjust taste to your preference.  Pour this sauce over the fried potatoes in the baking dish.

Lastly, sprink the grated cheese.  I like to add some chilli flakes and chopped coriander on top too.

Bake in a preheated oven at 180C until the cheese is golden and bubbly. This should take about 15mins, if the cheese turns color too quickly, cover your bowl with a piece of aluminum foil and keep baking for a few more minutes.

hey i made this today for the dinner and it turned out delicious. i would like to try it with some chicken filling..which one do u suggest if i use chicken? i totally loved it with mince though my husband isnt a big fan of mince.

Thanks dear! You can make chicken with some gravy, either boneless or shredded off the bone. Any meat dish will work there actually. :)

Can the bolognese sauce be used ?

I just wanted to clarify something on this menu, it just says 'mince sauce' above, i'm slightly confused, is it just mince sauce we make? or is it mince we make? Hope that made sense.

Hi, same sauce recipe just use chicken in place of the mince.

You can, yes but the oven baking helps melt the cheese and gives it a lovely golden colour. Without the final bake it will not look or taste as good. :)

Salaams Fauzia! My husbands friend is coming over tomorrow and I am planning on making this. I am not sure if I will have the time to fry the potatoes, as I have limited pots and pans (we are newlyweds and moving around a lot); do you have another suggestion in place of fried potatoes

W/Salaam, the layer of potatoes is entirely optional, we just love the taste in there. You can leave it out or use mashed potatoes or fries. Whatever is easiest for you. :)

Salaams Fauzia, sorry I forgot to ask, is it ok to use frozen mixed veggies? Ihas corn, peas, beans. Thanks so much!

Thanks so much!! Also regarding the baking, I have a smaller glass baking dish but I also have square foil dishes. I was thinking of dividing up the entire mixture into these 2 dishes, but I'm concerned about the baking time for the foil dish. Would you happen to know if it would be less or more? Thanks!

They should take the same amount of time, normally foil dishes are sturdy enough. If you find the quality is a bit thin, then get the foil dish out a few minutes early and check. :)

Hi. Can you please guide a bit regarding the potatoes? Do I just slice them and fry them in a bit of oil? No pre-boiling required? Any seasoning (salt n pepper)?

Hi, slice and deep fry them until cooked through, no pre-boiling required. If you plan on frying in a bit of oil instead of deep frying, then yes you will need to pre boil so they cook through properly. Season with a pinch of salt and pepper (although it is not necessary as the white sauce which will coat them is well seasoned).
