Baked Sweet Potato Fries
These incredibly flavourful sweet potato fries are the perfect healthier alternative to deep fried potato chips/fries. I always find that partially boiling them before baking results in crispier fries with soft centres that take a lot less time in the oven. They are great as a snack or an accompaniment to roasts, burgers, etc.
Rinse off the excess starch from the cut-up sweet potatoes. Put them in a pan and cover with water. Add 1 tbsp salt and the crushed garlic clove for an added flavour boost. Bring to a simmer and par-boil them for about 5 minutes ONLY.
Drain and allow them to steam for a couple of minutes in the strainer, this will help dry the outside to ensure all the other flavourings and oil will adhere to the fries. Put them back in the empty pan and add the paprika powder, chilli, lemon juice, some salt, pepper and the oil. Gently toss or mix everything until each chip is well coated.
Preheat the oven at 200 C.
Pour the potato chips/fries out onto a lightly greased baking sheet or tray. Bake for 10 minutes, then flip the chips over and bake for an additional 10-12 minutes or until they are crispy. Serve with a dip as a snack or as an accompaniment to your meal.
