A chip butty is a sandwich made with buttered bread and chips/french fries drizzled with some sauce. It is just as simple as its description, and is very famous across the UK. My subtle twist to this famous sandwich is that I prefer to use 'masala chips' instead of just regular plain chips in the sandwich, which I find elevates the flavour ten-fold. Usually a simple salad is sufficient to make this a carbo-ladden lunch for those super-active days or for when you just 'need' the carbs, coz lets face it, there are days when there doesn't need to be a valid reason WHY you would need carbs lol. To make a complete meal of it, you can serve this sandwich with chicken or fish.
Fry the chips, twice. (Fry them the first time, then drain them from the oil, re-heat the oil and fry them again to make them extra crispy). Blot out the excess oil on paper towels.
In a pan, heat the margarine/butter. When it melts, turn off the heat, add the spanish paprika or tandoori masala, salt, red chilli powder, garlic paste, tomato paste/puree and ketchup/tomato sauce (or chilli sauce if you prefer them extra hot).
Sometimes I like to add a little bit of any other spice like cumin powder or turmeric to play around with the flavour, or I add chopped chillies or red chilli flakes for extra heat. You can adjust according to your taste and preference.
Turn on the heat again and cook these ingredients until they are well combined and starting to thicken (you can add a splash of water if you prefer your chips saucy). Turn the heat to low, and throw in your chips. Toss them around so that the sauce/masala covers them properly. Turn off the heat and squeeze in the lemon and garnish with coriander.
Slit each bun in half and lightly butter and toast them if you want. Add in some of the masala chips and you can drizzle some extra ketchup or hot sauce in there for an extra saucy sandwich. Cover the buns and serve with a salad and a cold drink.
