Pearl Meatball Soup

A tasty, healthy and fun soup, different from the usual and a crowd pleaser!

INGREDIENTS

250gm minced beef

To the minced beef, add the following ingredients and mix them well, then cover and refrigerate to marinate for half an hour:

½ tsp. garlic paste
½ tsp. ginger paste
½ tsp. salt
1 small onion, chopped fine
1 tsp. black pepper powder
1 tbsp. chopped coriander
½ tsp. cumin powder
1 chopped green chili
½ a beaten egg
2 tbsp. breadcrumbs

Once marinated, shape meatballs, each no bigger than the tip of your thumb, they should be very small, about 1 inch each.

Shape them all and place them on a plate, then begin making the soup. For that you will need:

ADDITIONAL INGREDIENTS

2 tbsp. of oil
1 medium potato, cubed
1 medium carrot, cubed
1 small green pepper/capsicum, cubed
1 medium tomato, grated
¼ tsp. garlic paste
½ tsp. cumin powder
3-4 cups of water
salt to taste
black pepper to taste
1-2 tsp. corn flour mixed with a bit of water to form a paste
2 tbsp. coriander leaves, chopped roughly
juice of lemon (optional)

INSTRUCTIONS

Heat oil, then add 2 small meatballs into it and crush them into the oil and fry until they are nicely brown (this will flavor the soup) Then add the garlic and the chopped tomatoes. Cook until all the water from the tomato dries, then add the vegetables and stir fry for couple of minutes. Add the salt, black pepper and cumin powder. Cook for a minute then add the water into the pot, stir and cover. Turn the heat down to medium-low.

Once the soup starts simmering, drop the prepared meatballs one by one into the soup. Once all are in, let them simmer in there with the pot partially covered for about 30 minutes. Then add the corn flour paste to thicken the soup very slightly. Cook for another 2-3 minutes and turn off the heat.

Adjust salt and sprinkle the chopped coriander and lemon juice if you want. Serve as is or add some boiled rice into it then serve.

With the corn flour, is that the same as corn starch?

Yes, same thing.

I CAN SEE EVEN RICE IN THE SOUP..WHICH U HAVENT MENTIONED
