How to Turn All-Purpose Flour into Cake Flour

Step 1: Measure out the all-purpose flour that you’ll need for your recipe.

Step 2: For every cup of flour you use, take out two tablespoons of flour and return it to the flour bin. Throw the cup of flour (minus the two tablespoons) into a sifter set over a bowl.

Step 3: Replace the two tablespoons of flour that your removed with two tablespoons of cornstarch

Step 4: Sift the flour and cornstarch together. Sift it again, and again and again. The cornstarch and flour need to be well incorporated and the flour aerated. Sift the flour and cornstarch mixture about five times.


How to Turn All-Purpose Flour into Self-Rising Flour

For every cup of flour, add 1 and a half tsp of baking powder and a pinch of salt. Sieve together and use.

Yes same thing. Different recipes require different flours, so you will use the one which is mentioned in whichever recipe you are following.

Maida is just plain flour, and SR Flour is maida which has baking powder added to it. Here is a note on how to make it at home: SR Flour

Till today I did not know there was a difference between cake flour and AP flour Jazakallah.Your recipes are awesome.Since I found your website I have not touched any of my recipe books.May Allah bless you.

I wouldn't recall, most of these tips especially for conversions are pretty standard and are available anywhere you look for them online.

You usually mention about un salted butter for cakes. please tell me the brand name of that butter. also let me know the brand name of unsweetened coco powder.

Butter comes in different brands for different countries so I wouldn't know what is available in your country. However it is normally written on it if it is unsalted. Otherwise use the salted butter and reduce salt from your recipe.

You can use Blue Band, I do not know Noor Pur. But remember, Blue Band is a margarine so the taste will not be as good as butter.

I don't understand what you mean Selma. To make Cake flour you need to use AP flour remove 2 tbsp of it from a cup and replace with cornflour.

W/Salaam, you're welcome. Best to use the flour recommended in the recipe. SR flour has baking powder so you cannot use it for a recipe that already has baking powder as a separate ingredient. Cake flour is mostly used in sponges for lighter cakes. Some cakes work out better with plain flour.


I just wanted to ask if we can use self rising flour instead of all purpose flour?
I want to make chicken bread and I have self rising flour right now. Would it be ok if I use it for the bread.

W/Salaam, it will not give the same results as self rising flour has baking powder in it which is not needed for chicken bread dough recipe.

One more question: I have a lot of self rising flour, I bought it once to make a cake and then I didn't use in any of my dishes. Can you tell me if I can use it in any other recipe?

Yes you can use it in lots of cake recipes (I have several in the album which use SR flour). Do not store the flour too long though otherwise the baking powder in it will stop working and the cakes will not rise.

Oh ok! Thanks a lot. Btw, I bought it last year and it was just available in a big pack. Now I have a lot of it and as you said that don't store it for long, do you think one year is a long period of time?

Yes a year is on the longer side. You can use it just for regular baking in place of plain flour. Like for parathas and the like. Chances are the baking powder has lost it's power.

Hi, not more than a month as the baking powder will wear off eventually. Make sure to store in a very airtight container.

Why do we use cornflour in cakes.. can we avoid it.. and in some cakes the recipe calls for 3 eggs and in some 6 eggs? Can you clear my doubts?

For some recipes cornflour is crucial. And as for the eggs amounts, it depends on the cake recipe. There are all sorts of cake recipes.

They are the same thing, just called different names in different places/countries. :)

What is the difference between maida and the one flour we use for making rotis/ parathas at home daily? Can u please clear my doubt.. jzk :)

Maida is the plain white flour that we use for baking cakes or cookies etc. Now it really depends whether you use this same flour for your rotis/parathas at home or not. I use a different flour for rotis (whole-wheat flour or atta flour) which is slightly brown in colour, not very white. It's a bit healthier than maida.
