Creamy Garlic Prawns with Lime-Coriander Fried Rice

Servings : Serves 4

A fabulous and incredibly aromatic meal which packs quite a punch in terms of flavour.  Super easy to prepare too!

Ingredients for Creamy Garlic Prawns

  • 500 gm prawns, shelled and de-veined
  • 3 tbsp butter
  • 3 cloves of garlic, peeled and crushed or 1 tsp. garlic paste
  • 1 cup fresh/cooking cream
  • 2 tbsp finely chopped coriander or basil
  • a dash of black pepper powder
  • salt to taste

Ingredients for Lime & Coriander Fried Rice

  • 3 cups pre-cooked plain white rice (day-old leftover rice is best)
  • 2 tbsp butter or oil
  • juice of 1 lemon
  • 5 tbsp finely chopped coriander
  • 1-2 red chilli, chopped

Instructions

Heat the butter in a frying pan, add the prawns and cook for about 3 minutes until they are almost done and pink. Turn them over once during cooking. Add the garlic paste and half of the chopped coriander. Stir-fry for half a minute, taking care not to burn the garlic. Remove the prawns onto a plate and set aside.

Next add the cream into the same saucepan and season with salt and pepper. Reduce the heat to low and allow the cream to gently simmer for a minute. Put the prawns back into the pan and mix. Simmer for another minute and turn off the heat. Careful not to over-cook the prawns as that will make them toughen.

Adjust salt and pepper to your taste. Garnish with remaining chopped coriander. Serve over rice or spaghetti.

Heat the butter or oil, add the cooked rice, warm everything through. Squeeze in the lemon juice and add the chopped coriander and chopped red chilli. Stir everything until well-combined. Serve with an extra slice of lemon on the side.
