
These croquettes are easy to make and super yummy!
INGREDIENTS
½ kg white potatoes, boiled, peeled and mashed
½ cup boiled and shredded chicken (boil with 1tsp garlic/ginger paste and salt)
2 capsicum, chopped very finely (you can use a combination of colors if you like)
2 small onions, chopped finely
1 big carrot, grated
1 tbsp. oil or butter
2 tbsp. chopped coriander
1-2 green chilies, chopped
salt to taste
juice of 1 lemon (or to taste)
1 tsp. black pepper
1 tsp. chili powder
INSTRUCTIONS
Heat the oil, then add the onions, capsicum and carrot. Cook them down for just a couple of minutes to slightly soften them. Then add them to the mashed potatoes, add the green chilies, salt, lemon, chili powder, black pepper, chopped coriander and the shredded chicken. Mash together and adjust the spices n salt to your taste.
Shape the croquettes and refrigerate for at least half an hour, or several hours preferably if possible.
When ready to fry, beat one egg with a tsp. of water. Put some breadcrumbs in another plate. Dip the croquettes in the egg then roll one at a time in the breadcrumbs until well covered. Fry on medium heat until golden and crispy. You can shallow fry if you like, but I prefer deep frying these to get an even perfect coloring. Serve with chutney of your choice and enjoy! :)

Can we freeze them ahead? Like for ramazan.
Yes you can, although I would recommend not to freeze dishes with potatoes as they tend to release a lot of water as they thaw. However if necessary you can freeze them, then fry them in hot oil directly from the freezer.
can we bake these instead of frying?

W/Salaam, thanks for the lovely feedback! Did you peel the potatoes before or after boiling? Best results are when the potatoes are boiled with their peels then peeled and mashed. This prevents them from taking up too much oil.

Tried these a few times and they are fabulous when followed exactly. Did experiment with adding some chedder cheese in the middle of the croquettes -it was a nice touch!

jazakillah. do you know how long would they last in the fridge if i fry/bake them and keep them there? im traveling soon inshallah and want to leave some food for my husband in the fridge but i know he wont bother frying them himself, so im wondering if i keep them fried and in the fridge, how long should they last.

Oh they will keep for a few days at least (around 4-7 days). Just wrap them individually and keep them refrigerated in a good airtight container. :)

A question about freezing: have any ladies here tried freezing these? And, Fauzia, in an earlier post you say that freezing can be tried provided it is fried directly from freezer in hot oil....in this case, what about the egg wash and breadcrumb coating? Btw, I made these and currently in the fridge for setting, the taste is delicious, lets hope I make it through the end once fried! Thanks for another amazing recipe.
Dip them in the egg and breadcrumbs before freezing. That way you will just need to put them into the oil without that process. :)
