Baked Cheesy Chicken Meatballs

Deliciously cheesy meatballs, these taste great on their own or served with accompaniments like pasta or fries.

Ingredients
500 g
chicken mince
3 slices
white bread
(soaked in some milk)
1
medium onion, finely chopped
1-2 tbsp.
grated cheese
1
small garlic clove, minced to a paste
1
egg, lightly beaten
1 tbsp.
tomato paste
4 tbsp.
finely chopped parsley or coriander
1-2 tsp.
chilli flakes
(optional)
1-2
green chillies, chopped
(optional)
2 tbsp.
ketchup
salt to taste
Instructions 

In a pan, saute the chopped onion, garlic, salt and pepper for about 5-6 minutes or until soft. Allow the mixture to cool slightly.

Soak the bread in milk until softened and then squeeze out the excess milk and discard the milk.

In a bowl, add the chicken mince, beaten egg, tomato paste, parsley or coriander, cheese, onion mixture, chilli and the bread. Mix together well and shape around 12 meatballs.

Oil a baking sheet or ovenproof dish (I mostly use a 9x13 Pyrex dish) and arrange the meatballs. Squeeze a little ketchup on top of each meatball and spread with a spoon. Bake in the preheated oven at 180 C for about 20 minutes or until cooked through.

Serve and Enjoy!

Mozzarella.

I used mozzarella. You can mix with cheddar too if you like.

Can we deep fry these meatballs instead of baking? if yes, will the shape retained like yours after deep frying?

You can fry but I personally have always baked them so cannot be sure on the resulting shape from frying instead of baking.

W/Salaam, you can leave it out. Ketchup is your basic tomato sauce.

Salaam. I would like to make this recipe tomorrow.I have ground chicken which is already boiled. that is it was minced after being boiled. would it be possible to use the same?? Thank you for your recipes and assistance.:)

W/salaam, this recipe works best with raw chicken mince. You can try with the cooked mince but the results may not be as tender.

I want to use this recipe for BBQ night out.... If i make small meat balls, will they stay on skewers? because i faced alot of issues, where meat dont stick to Skewer and fall down.

Hi, it should be fine. Just make sure the mince is not wet to begin with. Drain any water from it. :)

Fozia please tell me can i use the chicken mince available in market ina cylinder shap...usually i use al islami chicken mince.

Bought it already minced. You can mince in a food processor if you have one.

They weren't baking so I turned up the heat and after a while when I came back, the dish was in half. LOOL. I don't know whether to laugh or cry.

Oh no, do you mean your baking dish broke? You have to make sure it is oven proof next time!

Lol yeah exactly. It is oven proof; it's pyrex and I've used it a dozen times for cakes and pizza.

Oh noo! That would happen if there is a hairline crack on the dish, sometimes you may not have even noticed the crack. Or it was too close to the grill/heat. Sorry dear!

Aah well, stuff happens. No worries. Mostly because this site makes people think I'm great at cooking:D I was wondering though, if the mixture gets too sticky, what should I do?

Thanks. For sticky mixtures you could add some breadcrumbs.

Hi Fauzia, would it be possible to prepare the mixture for the meatballs beforehand and keep it in the fridge overnight to cook the next day?
