Apple Cake

Servings : 1 loaf-pan sized cake

A pretty cake, moist and soft, topped with caramelised apple chunks…delicious with tea or even for breakfast on those days when you crave something cakey with your cup of tea or coffee in the morning. 🙂

Ingredients for Topping

  • 2 medium apples (peeled, cored and chopped into chunks)
  • 1 tsp. cinnamon
  • 3 tbsp. sugar

Ingredients for Cake

  • 1 1/2 cups flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 cup vegetable oil
  • 1 cup sugar
  • 2 tbsp. orange juice
  • 1 tsp. vanilla essence
  • 2 eggs, lightly beaten with a fork
  • 1/2 cup walnuts, chopped (optional)

Instructions

If you want, you can use melted butter instead of oil, or better yet, mix quarter cup melted butter and quarter cup oil to get a nice buttery flavor as well as the ideal moist texture for your cake.

Preheat your oven to 170 C degrees. Grease the pan and dust it with flour.

Sift the flour in a large bowl, then add baking powder and salt. In a separate bowl, whisk together oil, orange juice, sugar and vanilla. Mix wet ingredients into the dry ones, then add eggs, one at a time. Mix with a wooden spoon or spatula, making sure to scrape down the sides of the bowl to ensure all ingredients are incorporated.

Pour the batter into prepared pan. Spread the apple chunks over it and push them in lightly so they stick into the batter (don’t worry if the apples released some liquid, just add it all on the cake batter with the chunks, it will help caramelize the topping). Bake for about 1 hour, or until a tester comes out clean.

    • Did you put the cake in the center of the oven/middle rack? Sounds like the temperature was too much from the top. Make sure the top grill is turned OFF until midway through baking OR place a piece of foil on the top of the cake to protect it from over-baking if your oven temperature cannot be adjusted.

  • Dear Fouzia, i have been ur silent admirer for quite sometime now and have tried ur chicken bread and chicken roses recipes, both with great results alhamdulilah. Today i thought of trying this cake of urs. Now there is a good news and a bad news. The good news is that it tasted awesome for which i’m extremely thankful to u (this is the first time i have ever baked a cake from scratch, i usually buy ready cake mixes) Now the bad news, i kept it in the oven at 170 C for 1 hr, but the skewer test came out as wet, so i again baked it for 10 more mins, skewer was still slightly wet so i again baked for 5 more mins. The result, the middle was cooked properly but the sides became hard as i had overbaked it in trying to bake the middle. I usually cook other cakes at 180 C, so was the temp too high or too low for it? I’m hoping to inshallah make it again soon as absolutely loved the taste but could u kindly direct me as to what to do regards the baking part? Thank you for ur time and hats off to u for giving us such amazing recipes. Jazakallah.

    • Thank you. I wonder why it took so long to bake all the way through, did you preheat the oven? You can try increasing the temperature next time, maybe that will help inshaAllah. Or next time cover the cake pan with a piece of foil after it reaches the 1 hour period if it is not yet fully done in the middle. This will prevent the top and sides from over-baking.

    i hav tried this awesome receipe of yours.. but the problem i faced was my apple chunks sunken to the bottom. other than that everythin was quite ok. so can u suggest me how can my chunks will be on top lk urs..? 🙂

  • salam…i made this cake twice but it didnt come as i desired… i dont knw wats the problem..the batter was very thick ..can i add some milk to make it little thin? and watever paper i used for linig it just burnt and stick to the bottom of the cake…plx tel me wat to do..i reali like its taste..
