If you've had this amazing fried chicken either in Jeddah or Makkah or anywhere that has an Al-Baik fast-food chain, then am sure you could not possibly forget how fantastic it is. I tried many recipes but none came close, this one is the nearest to the real thing as I could get!! Fantastic crispy on the outside, yet moist and tender inside.

INGREDIENTS

1 chicken, cut into 8-10 pieces (with or without skin, up to you)

Wash and drain the chicken well. Using a fork, prick the chicken pieces all over.

Then marinate them in:

INGREDIENTS

1 beaten egg
2 tbsp. all-purpose flour
2 tbsp. corn flour
1 tsp. ginger paste
1 tbsp. garlic paste
1 tbsp. soya sauce
1 tsp. vinegar
1 tbsp. lemon juice
1 tsp. red chili powder
1 tsp. cinnamon powder
1 tbsp. paprika
salt to taste
½ tsp. Chinese salt
½ tsp. black pepper powder

INSTRUCTIONS

Cover with cling film and put the bowl in the refrigerator for at least 4 hours, preferably overnight.

Next, mix half a cup of flour with half tsp. salt and half tsp. chili powder. Put this in a plastic bag.

Now, 2 pieces at a time, put the chicken in the flour bag and shake to make sure each piece is well coated with the flour. This helps give the chicken a perfect rough and crispy surface.

Heat oil on high, add the chicken pieces without crowding the pan. You can do them in 2-3 batches. Lower the heat and deep-fry each batch for about 15 minutes, making sure to turn the chicken pieces once or twice in the oil in order to get them golden on all sides.

Drain on kitchen towels and serve with fries and some garlic sauce! Enjoy. :)

Here is the garlic sauce recipe.

Yes you can, use a bit of food colouring or red chilli powder or tandoori masala in it's place if you can.

is this the plain flour in whch we ll dip n thn fry in oil? Or the cornflour?

Fauzia's Kitchen Fun's picture

Yes, plain flour.

wuts chinese salt? do i really need to put that cuz its not available in my country

Fauzia's Kitchen Fun's picture

It is also known as aginomoto. Leave it out, it will still taste awesome. I hardly ever include it in the recipe when I make this dish. :)

Chinese Salt is MSG (Monosodium sodium glutamate). It is a food additive and flavoer enhancer. It is used mainly in chinese dishes.

Broasts are normally best served freshly fried but you can fry and freeze, just make sure to allow them to cool sufficiently and wrap them well. When ready to serve, let the come to room temperature then bake them in the oven to warm them up and get the crust crisp again.

Fauzia's Kitchen Fun's picture

They are added to the marinade itself. Before frying the chicken is just dusted in the spiced flour. :) Thanks for the lovely feedback.

Hello Fauzia,

I have a question, the first 3 ingredients that you listed (1 beaten egg, 2 tbsp. all-purpose flour, 2 tbsp. corn flour), are they supposed to be included in the marinade mixture, or for breading the chicken. I have baked the chicken with skin on, not including the first 3 ingredients, and it tasted great. It was moist and juicy. Can't wait to try the fried version. Thanks Fauzia!

W/Salaam, my version is slightly different in method but the result will be great, try it.

Fauzia's Kitchen Fun's picture

Have never tried that version of making the dish, sorry dear.

well I really would like to know your opinion how to get the injected hot spice into the chicknes, please let us know I am sure you have an idea because you are almost 80% close to the real thing, but needs to be juicier inside and the hot sauce dripping when taking a bite, Please let us know....

salam fauzia.

i want 2 know what is all purpose & self rising flour?

jazakallah

Fauzia's Kitchen Fun's picture

W/Salaam, AP flour is the same as plain flour. SR flour has baking powder in it. 1 and a half tsp per cup of flour and a pinch of salt.

is it a must to use cinnamon powder.

Fauzia's Kitchen Fun's picture

It gives a good flavour.

assalam alaikum.. I loved your recipie.. Must try it soon probably on weekend, but i just want to ask that. Isn't there any need to steam or slightly boil the chicken. will it be tender in just frying..

Fauzia's Kitchen Fun's picture

W/Salaam, no need to pre-cook the chicken. If you follow the recipe exactly inshAllah you will have perfect moist results. :)

Fauzia,
As salaam u alaikum,
I tried this recipe yesterday and it came out great! My husband and I loved it! My husband is really fond of fried chicken and since we live in The US, it's quite difficult to get good halal fried chicken here so I've tried a couple of recipes but this one is the best one for sure!
Thanks.

Thanks.

asw,i wanted to ask u which flour do we have to use to coat it before frying??is it maida or normal flour which is used to make chapatis??thanks in advance.

Fauzia's Kitchen Fun's picture

W/Salaam, plain maida flour.

Fauzia's Kitchen Fun's picture

Fauzia's Kitchen Fun's picture

Hi! How long did you fry the chicken for?

JazakiAllahu khair for this recipe. Turned out amazing Alhamdulillah!

Salam was wondering if you add both the flours in marinade too, also can I put chicken in oven after frying

Fauzia's Kitchen Fun's picture

W/Salaam, the flours should not be added into the marinade please.

Salam alaykum..

May I know in which folder has this recipe been included in? It isn't in the 'chicken' folder. Had to use the search tool to find it.

Fauzia's Kitchen Fun's picture

W/Salaam, international cuisine folder. :)
